First prize in Bari to "brodetto alla vastese" / Conquista il primo premio a Bari il brodetto alla vastese, by Nicola Del Prete
The fish brodetto alla vastese is awarded the first prize at gastronomica competition "Mezzogiorno a tavola" thanks to Marco Mattucci, the cook of hotel Rio. The course was also accompanied by the Guardiabruna ventricina (produced by Raffaele Colella) a cake reproducing the Caldora castle (made by Antonio La Verghetta) and Ida Iacusso's bread. The secret of the dish: freshness of the seafood, fished with the traditional paranze, variety, and cooking in an earthenware pot, adding one variety after the other. The recipe in the article.
